Garden Pasta

A tangy vegetable-based sauce for Spaghetti.

Ingredients

  • 5 ea Medium Tomatoes Chopped
  • 2 ea Celery Stalks Chopped
  • 2 ea Carrots Medium Chopped
  • 1 ea Onion, Medium Chopped
  • 6-8 ea Green Onions (top) Chopped
  • 1 packet Equal
  • 1 tsp Basil
  • 14 tsp Garlic Powder
  • 12 tsp Salt
  • 12 tsp Pepper
  • 12 tsp Oregano
  • 1 tbsp Vegatable or Salad Oil
  • 1 lb Spaghetti

Directions

  1. Put the vegetables in a pot and cover tightly. Cook over medium heat, stirring occasionally for 10 minutes. Add the seasonings. re-cover the pot and cover of medium-low heat for 5 minutes. Add the oil and simmer for 30 minutes or until the carrots get tender. Cook the Spaghetti. Drain. Toss with the sauce.
  2. Side note: If you have a chopper you can start the water boiling for the spaghetti. The prep is maybe 5-10 minutes for chopping and measuring. By the time the water is boiled and ready for the spaghetti, the sauces is closed to being done (if you're in a hurry).
